Adolfo is a plant based chef who embraces root-to-stem cooking by utilizing the whole vegetable for added nutrition, different textures, and low waste cooking. He has been working and leading kitchens professionally for several years in Portland with a vast knowledge of global cuisines. He is the founder of Verdure, pop ups that highlights seasonal produce through eclectic menus and is also the co-founder of Scopri, an Italian pop up that showcases seasonal vegetables. 

His goal is for people to experience vegetables in ways they have not encountered them before. To get people excited incorporating more vegetables and fruits in their everyday diet. Ultimately, making a connection on where our food comes from by exploring what the Pacific Northwest has to offer.  His favorite part of creating a menu is going to the farmers market and letting the different colors and varieties of fruits and vegetables be the guiding force. 

In his free time he loves coffee shop hopping, taking photos, hiking, going to concerts, and trying a new restaurant or pop up that has opened up.
