FARM-TO-TABLE MEAL PREP

For our transition week from winter into spring, we'll be featuring a mix of classic comfort foods alongside lighter dishes full of lightly cooked crunchy vegetables:

  • Pra Ram - This is one of my favorite Thai dishes, and it feels like the perfect meal for early spring: a hot broth to keep us warm on these still-cold rainy days, poured over fresh crunchy colorful vegetables. Pra Ram is essentially what happens when you turn peanut sauce into a soup, combining peanut butter, ginger, garlic, lime, coconut aminos with ample coconut milk and chicken or veggie stock. The protein (chicken or tofu) is cooked in the broth, which is then poured over a bowl of fresh vegetables and rice.

  • Fish Cakes - We’re lucky enough in Oregon to have lingcod caught off our coast year-round. It’s a mildly sweet and nutty, flaky white fish that works perfectly in our fish cakes, combined with mashed white sweet potato, dijon mustard, capers and fresh herbs, and then pan-fried to give them a crispy golden crust. We’ll be serving these with roasted potato & sweet potato wedges, sprouting broccoli, and a smoked paprika aioli for dipping. For the vegetarian option, we’ll be doing white bean cakes with the same preparation.

  • Shepherd’s Pie - one of the ultimate comfort foods, and a go-to dish for us at Gather Around Nutrition. We caramelize a mirepoix and combine it with protein (pan-fried grass-fed beef or lentils) set in a nutrient-rich umami broth. For the topping, rather than the standard mashed potato, we like to mix it up with other delicious winter root vegetables — a mashed medley of potato, white sweet potato and parsnip. This combination lowers the overall glycemic load and supplies other key immune-boosting nutrients for the body, while also making it so much more delicious with a perfect balance of sweet & earthy.

All of our meals are gluten-free and prepared in a certified gluten-free kitchen.

All meals are cooked fresh on Fridays, with pickup between 4-6pm or delivery to your doorstep between 6-7pm.

    We partner with Revel Meat Co. for all of our beef and pork products. All of their ranchers use regenerative grazing techniques to ensure the best possible life for their livestock and the health of our planet.

    Pasture-Raised Poultry

    Native-Caught Salmon

    Our fish is always wild-caught and never farm-raised. We buy salmon directly from native fisherfolk who use traditional fishing practices to ensure healthy populations of our sacred keystone species in the PNW.
